Slow Cooker Savory Apple-Spiced Pulled Pork

ingredients
4 pounds boneless boston pork shoulder roast
1 medium onion, chopped
4 cloves garlic
1/4 cup white vinegar
1/4 cup cilantro leaves
1 tablespoon dried oregano
1 tablespoon cumin
1 tablespoon kosher salt
1 teaspoon black pepper
2 cups apple juice
directions
Trim pork of any excess fat; place roast in a large, resealable plastic bag.
In a blender or food processor, place onion, garlic, vinegar, cilantro, oregano, cumin, salt and pepper. With blender running, pour in apple juice and puree ingredients.
Pour marinade over pork; seal bag pressing out excess air. Refrigerate at least six hours or overnight. Turn bag several times to distribute marinade evenly over pork.
Place pork and marinade in crock-pot. Cook eight hours on low heat.
Transfer pork to platter; cool slightly. Discard marinade.
With two forks, separate pork into shreds, scraping off and discarding any fat. Serve on buns.
