Creamsicle Roulade Jelly Roll Cake

ingredients
1 package (16 ounce size) angel food cake mix
1 teaspoon orange zest
1/2 cup powdered sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons powdered sugar, divided use
1 package (8 ounce size) cream cheese
1/4 cup orange juice
2 1/2 cups whipped topping, divided use
1 package (6 ounce size) raspberries
Garnishes
orange slices
fresh raspberries
mint leaves
directions
Heat oven to 350 degrees F.
Prepare cake batter according to package directions. Stir in zest. Spread into wax paper lined and greased jelly roll pan. Bake for 15 minutes.
Turn out onto tea towel sprinkled with 2 tablespoons powdered sugar. Remove pan, peel away paper. Using towel, roll cake jelly roll style. Refrigerate.
In bowl, beat remaining sugar and next 2 ingredients. Fold in 1 cup whipped topping. Unroll cake and spread evenly with filling, top with raspberries. Reroll cake, frost with remaining whipped topping.
Garnish with orange slices, raspberries, and mint leaves, if desired.
