Old Fashioned Orange Cake

This is a great cake recipe for a party or potluck. Fresh-squeezed orange juice is the key to getting citrus flavor just right. Frost if desired or simply sprinkle with sifted powdered sugar.

ingredients

3 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
1 cup margarine, softened
2 cups sugar
4 egg yolks
1 teaspoon vanilla extract
1/2 cup milk
1/2 cup orange juice
4 egg whites

directions

Preheat the oven to 375 degrees F. Grease and flour three 9-inch round cake pans.

Sift together the flour, baking powder, and salt.

In a mixing bowl, combine the margarine, sugar, and egg yolks. Beat on medium speed with an electric mixer until light and fluffy.

With the mixer running, add the vanilla. Then slowly add the flour mixture, milk, and orange juice alternately in batches. Beat well after each addition.

In a clean mixing bowl, beat the egg whites with clean beaters until stiff peaks form. Fold into the orange cake batter.

Divide the cake batter between the prepared cake pans. Place the pans in the oven and bake at 375 degrees F for 30 minutes or until a toothpick inserted in the middle comes out clean.

Remove the pans from the oven and let the cake cool in the pans for 10 minutes then turn the cakes out onto cooling racks to cool completely.

Frost as desired when cooled.
