Pumpkin Spice Bundt Cake From Scratch

ingredients
1 cup vegetable oil or canola oil
3 eggs
1 can (15 ounce size) pumpkin
1 teaspoon vanilla extract
2 1/2 cups white sugar
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup chopped nuts (optional)
directions
Preheat oven to 350 degrees F. Grease one 10 inch Bundt or tube pan. Cream oil, beaten eggs, pumpkin and vanilla together.
Sift the flour, sugar, baking soda, ground nutmeg, ground allspice, ground cinnamon, ground cloves and salt together. Add the flour mixture to the pumpkin mixture and mix until just combined. If desired, stir in some chopped nuts. Pour batter into the prepared pan.
Bake at 350 degrees F for 1 hour or until a toothpick inserted in the middle comes out clean. Let cake cool in pan for 5 minutes then turn out onto a plate. Let cool and dust with powdered sugar. (Or, frost with cream cheese frosting or a powdered sugar glaze)

I needed a pumpkin bundt cake for a party. I frosted it as a pumpkin using homemade orange frosting and a flat bottom wafer cone coverd in brown frosting for the stem. This cake has good flavor and is very moist. I only used 2 cups of sugar and it was sweet enough. I added 1/2 cup mini chocolate chips instead of nuts. I am sure it will well recieved at the Halloween party its going to tomorrow.

Great cake! I also used half oil & half unsweetened applesauce. I only had 2 cups of sugar on hand but I don't notice the missing 1/2 cup at all. The cake is moist, pumpkin-y and just a bit spicy - like a good pumpkin pie! The light sprinkle of icing sugar is just enough, the cake itself is quite sweet. Thanks for sharing this!

This is delicious. I made exactly as given, using powdered sugar sprinkled over the cake. It's a beautiful color. I thought the spices were just right. It is real sweet and very moist. I think a cream cheese icing would make it too sweet. You could probably cut the sugar by 1/2 cup but I probably will not.

I immediately cut the oil by half and added a small amount of apple sauce. The texture was wonderful, very moist, but probably will try to cut the oil yet again. The clove was too strong for my taste but the family LOVED it. I'll make this one again, playing with the spices. Was easy to prepare in my food processor.
