Easy Black-Eyed Pea Salad

ingredients
2 cans (15 ounce size) black-eyed peas, drained and rinsed well
1/2 cup minced green onions
1/4 cup diced red or yellow bell pepper
1/4 cup diced celery
1/2 cup diced tomato
3 tablespoons red wine vinegar
4 tablespoons olive oil (or other salad oil)
1 teaspoon minced garlic
1/4 teaspoon freshly ground black pepper
1/2 teaspoon coarse salt
1/4 teaspoon cayenne pepper, or to taste
1 teaspoon Tabasco sauce, or to taste
directions
Toss well and let rest in refrigerator for at least 2 hours.
Toss again just before serving. Serve with small wedges of lemon or lime and offer more Tabasco sauce.

We actually ended up using this more like a salsa than a salad. Served it with chips. It didn't start out that way, it was going to be a salad but one of my friends picked up a chip and scooped up some to taste it. She said "you HAVE to try this". Suddenly, we had black eyed pea salsa! It was really good.

I thought the seasonings overwhelmed the black-eyed peas so I added an extra 15 ounce can of black-eyed peas. Much better!
