A great breakfast to wake up to! Simply assemble the oatmeal ingredients the night before and stir in the peaches in the morning. Perfect for busy mornings.

non-stick cooking spray
2 cups rolled oats
8 cups water
1 teaspoon cinnamon
1/2 cup brown sugar
1 teaspoon vanilla extract
1 cup cubed peaches
Spray crockpot with non-stick cooking spray. Place oats, water, cinnamon, brown sugar, and vanilla into crockpot. Cook on LOW heat for 8 hours.
Just before serving, stir in peaches and sprinkle with additional brown sugar, if desired.

If your crockpot cooks on true "low" then this recipe should turn out fantastic! If you have a crockpot model that heats higher then use the warm setting or reduce the cooking time. Ours turned out perfect. Loved the vanilla, brown sugar, and cinnamon flavors that were really infused into it. The texture was very good too. It was nice to wake up to a warm breakfast on a cold morning!
