ingredients

1 cup butter, softened
1 1/2 cup granulated sugar
3 1/2 cups sifted all-purpose flour
1 cup mashed ripe bananas
1/2 cup Kahlua
4 large eggs
1/4 cup milk
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3/4 cup flaked coconut
3/4 cup chopped walnuts
sifted powdered sugar, optional

directions

Grease 10 inch tube pan well. Preheat oven to 350 degrees F.

Cream butter and sugar until fluffy. Beat in flour, 1/2 cup at a time, with remaining ingredients except coconut and nuts. Beat on low speed until mixture is well blended. On medium speed, beat 2 minutes, scraping bowl as you beat. Stir in coconut and nuts.

Turn into prepared pan. Bake for 45 to 50 minutes, or until golden brown. Remove from oven and let stand 10 minutes.

Invert on cake rack and remove pan. When fully cooled, dust with powdered sugar, if desired.

    This is my mother-in-law's favorite. I make it for her on every holiday including her birthday. All of the ingredients seem to work well together and they do not over power each other. You MUST try this!!

    If you read the directions it does say use a tube pan. Which is also called a bundt pan.

    This recipe sounded delicious and actually had a good flavor. However, the directions were confusing and I am not sure what type of pan this was supposed to be cooked in. I used a 10" loaf pan and it did not set up well. It overflowed the pan (creating a mess) and was raw in the middle and hard on the outside. Further clarification of the pan should be added. Also, I am pretty sure the bananas and the eggs should be added before the flour. This was not directed, but I recommend it.
