Banana Pecan Cake with Maple Frosting

Cake
2 1/2 cups sifted flour
1 2/3 cup sugar
1 1/4 teaspoon baking powder
1 1/4 teaspoon soda
1 teaspoon salt
2  eggs
2/3 cup shortening
1/3 cup buttermilk
1 1/4 cup mashed bananas
2/3 cup chopped pecans
  
Maple Frosting
3/4 cup shortening or butter
6 1/2 cups powdered sugar (sifted)
1/2 cup evaporated milk
1 teaspoon maple extract
1 dash salt
directions
Sift together flour, sugar, baking powder, soda, salt in a bowl. Add eggs, beat 2 minutes. Add shortening and buttermilk; beat another 2 minutes. Fold in the bananas and pecans. 
 Spoon mixture into 2 greased and floured 9-inch cake pans. Bake at 350 degrees F for 30-35 minutes. Remove to wire rack to cool. Frost with maple frosting. 
 For Maple Frosting: Combine shortening (or butter), sugar, milk, maple extract and salt. Beat for 5-10 minutes, until well mixed. Frost cake between layers and sides.

This cake is absolutely fabulous. It is easy to make, slightly time consuming but not too bad. The taste of the cake is sooo good. The icing is also great. The two together are very rich, in my opinion this cake could feed alot more than 8 because you do not need big pieces at all. I have made it twice and both times, great!

I didn't make the cake, just the frosting for a spice cake. The only adjustments I made was adding 1 1/2 tsp maple and 1 tsp vanilla. Oh my goodness this frosting is fabulous!
