3 cups cooked white rice
1/2 cup raisins
1 teaspoon vanilla extract
1 can (14 ounce size) sweetened condensed milk
1 can (12 ounce size) evaporated milk
1 tablespoon sugar
1 teaspoon ground cinnamon

directions

Spray inside of 2- to 3 1/2-quart slow cooker with cooking spray. Mix all ingredients except sugar and cinnamon in cooker. Cover and cook on low heat setting 3 to 4 hours or until liquid is absorbed. Stir pudding. Sprinkle pudding with sugar and cinnamon. Serve warm.

    First time I made this it was very runny. It tasted so good that I wanted to try again. The second time I slightly undercooked the rice and then it absorbed all the liquid. Maybe I cooked the rice too much the first time or maybe it's the type of rice I used (didn't specify so I used long grain). I will make it again now that I have tweaked it a bit.
