Baked Coconut Rice Pudding

ingredients
3 ounces short or round grain pudding rice
1 pint coconut milk
1/2 pint milk
1 large strip lime rind
2 ounces caster sugar
1 knob butter
1 pinch ground star anise
fresh or stewed fruit to serve
directions
Mix the rice with the coconut milk, milk, lime rind and sugar. Pour the rice mixture into a lightly greased 2 1/2 pint shallow ovenproof dish and dot the surface with a little butter. Bake in the oven for about 30 minutes. Remove and discard the lime rind.
Add the star anise stir well and return to the oven. Cook for a further 1-2 hours or until almost all the milk has been absorbed by the rice and a golden brown skin has formed on the top of the pudding.
If you think it is browning too quickly, cover the top of the dish with foil.
If you intend serving this dish chilled, then stir in an extra 3 Tbsp. of coconut milk before serving.
