3 ounces short or round grain pudding rice 1 pint coconut milk 1/2 pint milk 1 large strip lime rind 2 ounces caster sugar 1 knob butter 1 pinch ground star anise fresh or stewed fruit to serve
Mix the rice with the coconut milk, milk, lime rind and sugar. Pour the rice mixture into a lightly greased 2 1/2 pint shallow ovenproof dish and dot the surface with a little butter. Bake in the oven for about 30 minutes. Remove and discard the lime rind.
Add the star anise stir well and return to the oven. Cook for a further 1-2 hours or until almost all the milk has been absorbed by the rice and a golden brown skin has formed on the top of the pudding.
NOTE: If you think it is browning too quickly, cover the top of the dish with foil.
If you intend serving this dish chilled, then stir in an extra 3 Tbsp. of coconut milk before serving.
