Fried Tofu With Sweet And Sour Sauce

ingredients
10 ounces firm tofu
peanut oil (or other vegetable oil) for deep-frying
5 tablespoons cider vinegar
4 tablespoons sugar
1 teaspoon salt
3 small hot red chilies
3 green onions, cut lengthwise into thin strips
directions
Make sure that the tofu is nice and dry. Remove it from the package and place it on a slightly tilted plate to drain.
After draining, cut the tofu into triangular pieces, about 1 or 1 1/2 inches on a side.
Heat the peanut oil very hot, for deep frying. Fry tofu until golden brown, remove, and drain on paper towels. Try to keep these warm while you make the sauce.
In a small saucepan, heat the vinegar, sugar and salt until slightly thickened. Remove from heat and add chiles. Let stand for a few minutes to pick up the chile flavor.
Arrange fried tofu on a plate. Pour some of the sauce over the tofu and serve the remainder as a dipping sauce.
Garnish with a green onion strips, and serve over shredded lettuce, or as an appetizer.
