Chow Fun (Fried Broad Noodles) with Beef and Broccoli

ingredients
Marinade
1 teaspoon cornstarch
2 teaspoons light soy sauce
1 teaspoon sherry
Noodle Mixture
1 pound fresh noodles (or equivalent dried)
1/2 pound beef
1/2 pound broccoli
2 cloves garlic (or more)
1 slice ginger (size of U.S. quarter or more)
2 teaspoons light soy sauce
4 tablespoons oil
3 tablespoons oyster sauce
2 teaspoons sesame oil
directions
Slice meat into thin strips. Put meat into marinade for at least one hour (longer is okay).
Break broccoli into florets. Prepare noodles according to package directions. Drain.
Heat 1 Tbsp oil to almost smoking. Add broccoli. Stir fry for 3-4 minutes. Remove broccoli from wok/pan.
Heat 1 Tbsp oil to almost smoking. Stir fry garlic and ginger in oil for about 30 seconds. Add beef. Stir fry beef in same oil as garlic and ginger. Add 1 Tbsp oyster sauce to beef as it stir fries. Remove beef to same bowl as broccoli.
Heat 2 Tbsp oil to almost smoking. Add cooked noodles. Stir fry noodles for about 3 minutes. Add beef and broccoli to noodles. Add remainder of oyster sauce to noodles. Add soy sauce and sesame oil to noodles. Stir fry everything to blend flavors.
