Prawn Rice Paper Rolls

30-60 minutes
ingredients
40 small-medium, cooked tiger prawns, peeled
1 lime, juiced
6 shallots, trimmed
1 Lebanese cucumber
1/2 red capsicum
1/2 avocado
20 square rice paper sheets (16cm x 16cm)
1 bunch coriander
Dipping Sauce
1/4 cup sweet chili sauce
1 tablespoon soy sauce
directions
Marinate prawns in lime juice for 30 minutes.
Cut shallots, cucumber and capsicum into thin 10cm strips. Slice avocado into strips.
Place a sheet of rice paper in a bowl of warm water for 30 seconds. Drain and place on a tea towel.
Place a sprig of coriander in top left corner on rice paper. Place 2 prawns, shallot, cucumber, capsicum and avocado strips in bottom left corner. Fold and roll up leaving one end open.
Serve with combined sweet chili sauce and soy sauce for dipping.
