1 pound ground beef
1 medium onion, diced
1 can (10 ounce size) Ro-Tel diced tomatoes and green chiles
1 can (12 ounce size) regular beer
2 cans (15 ounce size) Mexican beans, rinsed and drained
3 tablespoons chili powder
1 teaspoon ground cumin
optional
chopped fresh cilantro or parsley
shredded cheese
In a large skillet, brown the ground beef and onion over medium-high heat. Drain off any excess grease.
Stir in the tomatoes (undrained), beer, beans, chili powder, and cumin. Mix well then pour into the crock pot.
Cover the crock pot and cook on low heat for 4-6 hours to let the flavors meld. Garnish with chopped cilantro or parsley before serving. Serve with cheese, optional.
