3 pounds coarse ground chuck 3 pounds cubed beef stew meat 1/3 cup extra virgin olive oil 3 jalapeno peppers, seeded & minced 1 jalapeno pepper, whole 4 poblano peppers chopped & seeded 1 large red bell pepper 1 large green bell pepper 1 large onion 1 bulb chopped garlic 3 dried ancho chiles seeded 2 dried seeded chile negros 3 dried seeded red New Mexico chile 5 tablespoons standard chili powder 1 tablespoon cocoa powder 2 tablespoons cumin 1 teaspoon black pepper 1 teaspoon adobo seasoning 1 tablespoon beef base 2 cups water or beer 1 can (28 ounce size) chopped tomatoes 29 ounces canned black beans
directions
Saute meat till browned in olive oil, drain the meat, add all the peppers onions and garlic and spices saute for 15 minutes till onion is translucent.
Mix beef base with water or beer, and add to the beef and veggie mixture, simmer on low for about half hour, add tomatoes and beans, and continue to simmer till the cubed stew meat is very tender.

Count me in as another winner with this awesome recipe! One of the judges told me later that it was hands down the best one there! I had to order some of the ingredients online because my local stores just don't carry them, but it was worth it. Now if only there had been a cash prize for winning!

Yup. Another 1st place. I entered against 15 other chilis in a local community cookoff and canned food drive. I won!
My modifications were using a large slowly braised beef brisket with a thick spicy/sweet rub. Now some people would think this crazy, but I added a cup of Franks red hot. Yes, the chili was hot, but not crazy hot. As sausces go, there is WAY hotter. I use this because of the "tang" it provides. Personal preference.
I had to procure most dried chilis from a Savory Spice place, the grocery store did not have the specific chilis.
It took two days to make, and I always let my chili sit in the fridge overnight to blend and intensify flavors. I give it about an hour to reheat in a crockpot slowly then I dig in!

Really nice recipe. Takes quite a bit of prep to cut up all of those peppers but it's worth the effort. Fantastic chile flavor without being overly hot. If some of the listed chiles aren't available in your store, you can easily substitute other chiles and still get nice results. Remember - the larger the chile, the less heat.
Instead of water, try a robust beer like a bock typically available in winter or spring. I'm also going to toss in some corn tonight and see how that works out.

Yes this recipe was vague at some points but who wants to follow everything exactly. It's all about your own tastes. Be creative!
That said... this was a fantstic recipe! The best chile recipe I have yet to try. I used venison and cooked it a bit longer to tenderize the meat. Also used chocolate liquor with the cocoa.In addition, cumin seed and some other varieties of dried peppers were used. THis has just the right amount of heat without detracting from the flavors.

I made this recipe last Saturday for a chilli cook off 30 bowls entered. It was a neighborhood gathering I was just a friend of a friend. I made this and lost the cook off by 1 vote. Over 100 people where at the event. My crock pot was the only one empty at the end. Everyone loved it. It's a must try. The only thing I changed was to add 2 tablespoons of sugar and I roasted all the pepper on the grill before adding.

i'm part of a fundraising commitee that raises money to send kids from financially challenged families to summer camp. over the weekend we held a chili cook-off and this chili was the topic for the day.
we had to change all of the chili's as the ones suggested are not local or in season. it didn't even seem to matter.
we also added chili paste, paprika and pork sausage.
it was awesome, i just regret not putting some aside before we submitted it. thanks for the recipe.

I had to make chili for a fundraiser laste week. We are raising money for a kidney transplant for a coworker. I left my chili recipe at home and so I was forced to look something up on line. This one sounded good so I went with it. My pot sold out first and everyone was talking about it...I even bought 2 bowls for myself! It has the best flavor of any chili I've ever had and I've had alot. You can't go wrong with this recipe! I'm making it again this week if you like a hotter flavor try adding canned chipotle peppers in adobo sauce and skip the adobo seasoning. Also if you're like me and the hot pepper oils burn your skin try puree-ing them in a blender after you cut the seeds out.

I picked this recipie for a chilli contest because it had such consistant good reviews. I enetered it agains 26 entries, some that have even won a telinga (Largest chillit contest). Guess what another winner! This one was rated 10 out of 10 by all 4 judges! I was a bit hesitant to add the beans( Here in Texas they say real chilli doesn't have beans) but I did, and it was great. I modified the peppers some, since I could find all of them locally, and I increased the chilli powder and added paprika.It was great. Thank you for a wonderful recipie!

I'd never made chili before using this recipe, and I have to say - rubber gloves all the way! Other than having burning hands for two days from seeding the chilies, the chili itself has turned-out suprisingly mild. I've even gone so far as to add another Tbsp of chili powder! The office chili cook-off is tomorrow, and whether I win or not, this has been fun, and I have delicious chili as a pay-off. Thanks for the free recipe, and for the helpful comments as well. Unlike others who have posted comments, I did not win the community chili contest with this recipe. The judges picked a winnner that came from an old Betty Crocker recipe--because it wasn't hot! Go figure.
Those attending the event raved about this recipe, including two of the top three finalists who preferred it to their own. It is warm but not hot. I do not like really hot food and this chili had a good lingering warmth about it.
Cooking notes: It took me closer to 4 hours to prepare (I cook, but not often). I chopped the dried chilis (after seeding them) in a food processer. I added another 15 oz. can of black beans because I like beans. Finally I upgraded the stewing meat to bottom round and it worked really well.
I recommend this recipe quite highly.

In my office we have a standing tradition for a Chili Cookoff/Tailgating party for Super Bowl weekend. Last year I entered a pork tenderloin chili that won first place. This year, I entered this recipe and also won. I never tested the recipe before entering. I was able to order the dried peppers from a Mexican grocer website. Everyone in my office loved the chili. I made a few changes, due to the lack of certain spices and peppers at my local store. I added some chipolte in lieu of the chili negros and the Red New Mexicos, as I could not find or did not know what either was. I used a little extra cocoa and an amber beer, but next time around I want to try something darker and more garlic.
