Jamaican Coconut Pie

ingredients
1 1/3 cup flaked coconut
1 unbaked pastry shell (9" size)
3 tablespoons butter or margarine, softened
1/2 cup sugar
1 cup dark corn syrup
3 eggs
1 tablespoon rum
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
1 cup whipping cream, whipped
additional toasted flaked coconut, for garnish
directions
Sprinkle the coconut over pastry shell. Set aside.
Cream butter and sugar. Add corn syrup, eggs, rum, nutmeg, vanilla and cinnamon. Beat well at medium speed of mixer.
Pour egg mixture over coconut in unbaked pastry shell. Bake at 350 degrees F for 45 minutes or until filling is set. Let cool completely.
Top pie with whipped cream and sprinkle with toasted coconut.
