ingredients
4 eggs, beaten
1 1/2 cup sugar
1/2 cup butter, melted
1 tablespoon white vinegar
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup coconut, flaked
1 pie shell (9 inch size), partially baked
toasted coconut, optional
directions
Combine the first 6 ingredients. Beat well. Stir in coconut, stir well and pour into partially baked 9 inch pie shell.
Bake on 325 for 45 to 50 minutes or until set. Cool on wire rack. Garnish with toasted coconut if desired.
