This American buttercream filling has just the right balance of sweetness and coffee flavor. It has a creamy spreading consistency that makes it perfect for filling cakes and frosting cupcakes.

1/2 cup whipping cream
2 teaspoons instant coffee granules
2/3 cup butter, softened
2 1/2 cups powdered sugar
1 tablespoon cocoa powder
2 teaspoons coffee liqueur or cooled espresso or flavored extract
Heat the whipping cream until warm using the microwave (50% power) for 30-45 seconds or on the stove top. Do not let it boil, just heat until warm.
Combine the warm cream and coffee granules and mix until the coffee dissolves. Set aside to cool.
Combine the butter, powdered sugar, and cocoa powder in a mixing bowl. Beat on medium speed with an electric mixer until light and fluffy.
When the coffee mixture is cooled, add it and the coffee liqueur to the mixing bowl and beat on medium speed until combined and fluffy. Use immediately on cooled cakes or cupcakes or cover and refrigerate until needed.
