Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Cherry Pie Cake

ingredients
2 cans cherry pie filling, RESERVING
1 cup cherry pie filling
1/2 cup pecans (optional)
1 package white, yellow or chocolate cake mix
1/2 cup margarine
1 teaspoon pure almond extract
directions
Mix cake with margarine to look like crumbled pie crust. Mix the extract into the pie filling. Save extra filling for topping.
Spread rest into the bottom of 9" x 12" greased pan. Pour pie filling on top. Put reserved "pie crust" and pecans on top. Bake 45 minutes at 350 degrees F.
NOTE: It seems a spice cake mix with apple pie filling would be another good option. Then just sub the almond extract with either vanilla or cinnamon extract.
