3/4 cup wheat or oat bran
3/4 cup whole-wheat flour
1/2 cup sugar
1 1/2 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 egg, slightly beaten
1/2 cup nonfat plain yogurt
1/4 cup vegetable oil
1 cup grated zucchini
1/2 cup coarsely chopped pitted dates
1 teaspoon grated orange zest
Lightly grease a muffin tin. Preheat oven to 400 degrees F.
In a large bowl, whisk together the bran, flour, sugar, cinnamon, baking powder, and soda.
In a separate bowl, stir together the egg, yogurt and oil. Add the zucchini, dates and orange zest and mix thoroughly. Add the wet mixture to the dry mixture, stirring just until moistened.
Fill muffin cups three-quarters full. Bake 20 to 25 minutes, until muffins are lightly browned. Remove them from the muffin tin and cool on a wire rack.
