ingredients
2 cups self-rising flour
1 1/2 teaspoon pumpkin pie spice
2 eggs
1 cup mashed sweet potatoes
1 cup sugar
1/2 cup milk
1/4 cup melted butter
1 cup walnuts, finely chopped
1 teaspoon poppy seeds
Topping
1 1/2 teaspoon brown sugar
1/2 teaspoon cinnamon
directions
Sift together flour and pumpkin pie spice. Mix the eggs, sweet potatoes, sugar and milk in a mixing bowl.
Combine the dry ingredients with the melted butter, and mix well until completely blended. Stir in the walnuts.
Pour about 1 tablespoon of muffin mixture in mini paper muffin cups.
In a separate bowl, mix brown sugar and cinnamon. Sprinkle the mixture on top of the uncooked muffins.
Bake the muffins at 350 degrees F for about 15 minutes, or until toothpick inserted in the center comes out clean.
