There's nothing quite like a freshly baked muffin, and these black raspberry cream muffins are the perfect treat. Made with fresh black raspberries in a light, fluffy batter.

4 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3 cups black raspberries
4 large eggs, lightly beaten
2 cups sour cream
1 cup vegetable oil
1 teaspoon vanilla extract

directions

Preheat the oven to 400 degrees F. Grease a muffin tin or line with paper muffin cups.

Combine the flour, sugar, baking powder, baking soda, and salt in a bowl and mix. Add the berries and mix gently so they are just covered in the flour mixture.

Combine the eggs, sour cream, oil, and vanilla in another bowl. Mix until uniform in color. Stir the egg mixture into the flour mixture, mixing just until combined (do not over mix the batter).

Fill the muffin cups 2/3rds full with the black raspberry batter. Place the muffin tin in the oven and bake at 400 degrees F for 20-25 minutes or until the muffins test done with a toothpick.

Remove the muffins from the oven and let cool in the tin for 5 minutes then remove the muffins to a wire rack to cool completely.

Store the cooled muffins in an airtight container.

    I just made these, and they are wonderful! I made them exastly as the recipe instructed, using fresh black raspberries from our own raspberry bushes. Will be making them again, and probably will be freezing some depending on if it is a good year for the berries. Highly recommend this recipe! Note: I got 36 muffins out of this recipe.
