Cherry Nut Muffins
INGREDIENTS:
1/8 pound butter (no substitutes)
1/2 cup sugar
1/2 cup brown sugar
2 egg yolks, well beaten
1 cup cake flour
1/4 teaspoon baking powder
2 tablespoons maraschino cherry juice
2 egg whites, beaten stiffly
1/2 cup pecans, ground finely
1 jar (6 ounce size) maraschino cherries
powdered sugar
DIRECTIONS:
Cream together butter, sugar & brown sugar. Add egg yolks. Mix thoroughly. Add cake flour, baking powder and cherry juice. Fold in egg whites.
Butter small (mini) muffin tins and sprinkle with pecans. Fill tins with teaspoon of batter, a cherry and another teaspoon of batter and another cherry. (halve the cherries). Sprinkle with pecans. Bake at 400 degrees F for 8 minutes. Roll in powdered sugar.
