It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


2 cups flour
3/4 cup quick cook rolled oats
3 tablespoons flaxseed
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup buttermilk
2 egg whites
1/4 cup honey
1/3 cup applesauce
1/2 cup dried cherries
1/4 cup cranberries, roughly chopped
nonstick cooking spray
Preheat oven to 350 degrees F.
In a large bowl, mix the flour, oats, flaxseed, baking soda, and salt. Combine well.
In a small bowl, mix the buttermilk, egg whites, honey and apple sauce.
Make a well in the dry ingredients and add the wet ingredients. Mix well then fold in the cranberries and dried cherries.
Coat a muffin tin with cooking spray. Place a portion of the batter in each of the muffin compartments. Bake for 20 minutes (or until golden brown) at 350 degrees F.
