It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

1 cup all-purpose flour
1/2 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup granulated sugar
1 large egg
1/4 cup butter or margarine, melted
1 teaspoon vanilla extract
3/4 cup chopped peeled apple
3/4 cup chopped cranberries
1/4 cup raisins
Preheat oven to 400 degrees F. Spray a standard muffin pan with vegetable cooking spray; set aside.
Combine flour, oats, baking powder, cinnamon and salt in a large mixing bowl.
In a separate bowl, combine sugar, egg, melted butter and vanilla; stir in apple, raisins, and cranberries. Fold into flour mixture, stirring until just moistened. Spoon into prepared muffin pan, filling each cup about two-thirds full.
Bake 20 to 25 minutes or until a toothpick inserted into center of muffin comes out clean. Turn out onto a wire rack to cool.
If not serving immediately after cooled, seal in an airtight container until ready to serve.

A tad bit on the ugly side but mighty tasty.
Recipe #54934, no water, milk or anything else. End up with na bunch of flour coated fruit!

These were delicious. At first I thought the milk or liquid had been omitted, but baked them anyway. They turned out just fine. They are the best muffins I've had....a struesel topping would be great on them.
This recipe is missing a key ingredient! The mix was WAY too dry to stick together as it cooked. Do not use recipe unless you add milk or orange juice. Had to throw a whole batch away.

I made these for a group of 6 coming to my house to watch the Twin Cities Marathon. They were a huge hit. Recipe was easy to follow and I followed it exactly choosing butter over margarine and adding one addition. I took the Nut Crunch topping idea from the "Apple Crunch Muffins recipe ID# 15178" and added it to this. Yummy. Only wish I'd doubled the quantity. A dozen went too quickly.
