Low Fat Sweet Potato Muffins

ingredients
1 1/2 cup bran cereal
1 cup milk
1 egg
1 cup cooked Purple Sweetie (or other type) sweet potatoes
1/2 cup honey
3 tablespoons lemon juice
2 large oranges, grated rind of
3/4 cup raisins, soaked and well drained
1 1/4 cup whole wheat flour
1/4 teaspoon salt
1 1/2 teaspoon baking powder
1 teaspoon baking soda
directions
In a large bowl, pour milk onto cereal and let stand.
Mash sweet potato with lemon juice. Add potato to the milk and cereal, along with beaten egg, honey, orange rind, and raisins. Mix well.
In a smaller bowl, mix together flour, salt, baking powder and soda. Mix together with the wet ingredients and immediately divide into a greased muffin pan.
Bake in a preheated oven at 400 degrees F for approximately 25 minutes. Let stand for 8-10 minutes before removing from pan.

Reduced the honey a little bit. Amazing that something so healthy tastes so good. Gave them to friend's toddler who gobbled them right up.

I made some modifications: Used raisin bran instead of adding raisins, added 1/2 Cup chopped pecans and 2 tablespoons of maple syrup. Yum, Yum
