Date And Cashew Stuffed Chicken

ingredients
1/2 cup chopped dates
1/4 cup toasted cashew pieces, chopped
1 tablespoon honey
1 tablespoon canola oil
2 tablespoons lemon juice
1 1/2 pound boneless, skinless chicken breasts, each at least 1 1/2 inches thick
1 cup low-fat, low-sodium chicken broth
1/2 cup dry white wine
directions
Preheat oven to 350 degrees F.
In a blender or food processor, combine dates, cashews, honey, oil and lemon juice until well-mixed.
Starting in the middle of the straight side of each breast, cut a pocket with a small, sharp-pointed knife. Be careful to stay in the middle of the meat and not to cut through to the opposite side. Spoon some of the stuffing into each breast.
Place the chicken breasts in a casserole dish. Add the broth and wine. Cover the dish and bake for 20 minutes.
Uncover and bake until the chicken is slightly brown, about 10 minutes, or pop the chicken under the broiler 1 minute for additional browning (make sure your dish is broiler-safe).
