Chicken And Blue Cheese Roll-Ups

ingredients
1/4 pound blue cheese, crumbled
2 ounces unsalted butter, softened
4 boneless, skinless chicken breast halves, tenderized
8 slices bacon
2 3/4 tablespoons olive oil
directions
Mix together blue cheese and butter until smooth. If needed, place chicken breasts between 2 sheets of waxed paper and flatten with a meat mallet or rolling pin. Spread evenly on one side of each chicken breast. Roll up the breasts, wrap with 2 pieces bacon each, and secure with toothpicks.
Heat oil in a pan over a moderate to low heat. Cook chicken rolls, turning frequently, for 15-20 minutes or until cooked through.
