This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

Tender chicken is stuffed with cheesy spinach and wrapped in bacon. How can you go wrong? Even spinach-haters will love this recipe (because bacon makes everything better, right?)
1 package (9 ounce size) frozen spinach, thawed
3/4 cup grated Swiss cheese
2 tablespoons grated Parmesan cheese
4 boneless, skinless chicken breast halves, pounded thin
salt and pepper, as needed
4 slices bacon, more if needed
Preheat the oven to 450 degrees F.
Squeeze as much of the liquid from the spinach as possible. Combine the spinach, Swiss cheese, and Parmesan cheese in a bowl.
Sprinkle both sides of the chicken with salt and pepper. Place the chicken on a flat work surface.
Place about 1/4th of the spinach mixture onto each chicken breast. Roll the chicken up around the filling, trying to enclose it as much as possible. Wrap one slice of bacon around the chicken and secure with a toothpick if needed. If the chicken breasts are large you may want to use 2 slices of bacon per roll.
Place the chicken in a baking dish and place in the oven. Bake at 450 degrees F for 20-25 minutes or until the bacon is crisp and the chicken is cooked through.

Very lacking in flavor/too bland. Add some garlic powder to the spinach and maybe sharp cheddar cheese instead of Swiss. Next time I'll try adding some balsamic vinegar to the spinach. Precook the bacon a little so it's not rubbery and underdone. Consider marinating the chicken prior to assembling to enhance flavor. Italian dressing maybe? Overall an easy recipe but lackluster.

Quick tasty dish enjoyed by entire family. Instead of pounding and rolling, I butterflied and stuffed the chicken breasts and added 1 Tbsp. Horner Real bacon bits to filling. 👍 Great with lightly sauced veggies and grape tomatoes.

Wanted more bacon so used two slices on each piece of chicken. Seasoned the spinach mixture with some seasoned salt instead of regular salt for more flavor.
