Ingredients:
2/3 cup pan drippings from hens
3 tablespoons flour
1 cup white wine
1 cup red currant jelly
1 teaspoon dry mustard

Directions:

After roasting Cornish hens, remove from pan. Leave 2/3 cup drippings in the pan and place on burner over medium heat. Gradually add flour to make a smooth paste. Add white wine, red currant jelly, and dry mustard, and season to taste. Stir and bring to boil. Reduce heat and simmer until thickened.
