Bahama Breeze's Citrus Butter Sauce

ingredients
2 teaspoons olive oil
1 tablespoon minced shallots
1/2 cup white wine
1/2 cup fresh-squeezed orange juice
6 tablespoons cold butter cut in cubes
1 tablespoon sugar
salt and white pepper to taste
directions
Heat a small saucepan and add oil. Add shallots and saute for one minute. Add white wine and orange juice. Reduce by three-fourths.
Reduce heat to low and add butter cubes one at a time while whisking the sauce to evenly incorporate the butter. Do not allow the sauce to boil.
Add sugar, salt and white pepper. Stir to combine, then strain the sauce through a fine mesh strainer. Serve hot.

I have a question. Is this their recipe for citrus hollandaise that they put on their shrimp and grits? I usually use Land 'O Lakes butter. Is that good enough for this recipe?
We recommend using Kerrygold (Irish butter). Also make sure that the butter is fairly new as butter that has been stored in the refrigerator for a while can absorb odors from other foods and alter the flavor of the butter.

Just made this and it was delicious. Not overwhelmingly citrusy but had enough orange in it to really go nicely with the fish I served. I've never had the restaurant version but to the other reviewer I don't know how it could possibly be a clear butter sauce that they serve and still have orange juice in it. Mine wasn't all that cloudy but it wasn't clear either. I'd also ask what kind of wine you used, as that may have made it taste too orangy or something. I thought this sauce was very nice as written.
i made this today and it was nothing like the butter a bahama breeze. it was cloudy whereas BB's is clear. it tasted like butter flavored orange juice, wereas BB's tastes like citrus flavoered butter. i was extremly dissapointed and award it no stars.
What kind of butter did you use? That could make a huge difference.
