ingredients
5 slices white and/or pumpernickel bread, crust removed
1 box (4 ounce size) peppercorn Parmesan spreadable cheese
1/3 cup chopped red onion
1/2 cup chopped chives, divided
4 ounces smoked salmon
directions
Using rolling pin, press down on bread.
In bowl, combine cheese, onion, and 1 tablespoon chives. Spread 1 tablespoon cheese mixture on each bread slice. Divide salmon among slices. Roll jelly roll style.
Spread outsides with remaining cheese mixture, roll in remaining chopped chives.
Cut each roll into 4 pieces.
