This macaroni salad is a great summertime classic and it's perfect for picnics or barbecues. It's also a really easy dish to make ahead of time, which is always a bonus.
8 ounces elbow macaroni
1 cup real mayonnaise
2 tablespoons vinegar
1 tablespoon prepared mustard
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded carrot
1 cup diced green or red bell pepper
1/4 cup diced red onion chopped
Cook the elbow macaroni as directed on the package. Rinse in cold water and drain well.
In a large bowl, stir together the mayonnaise, vinegar, mustard, sugar, salt, and pepper. Mix to dissolve the sugar.
Stir in the cooked pasta, carrot, bell pepper, and onion. Mix well.
Cover the bowl and refrigerate for 1-2 hours or until well chilled. Stir before serving. Add a little additional mayonnaise if the macaroni salad seems dry after chilling.

I use miracle whip instead of mayo and omit the sugar. Just my preference. I've made this twice now and will make again.

Not only is this macaroni salad now a family favorite, it is so easy to make!!! My family asks me to make it for all of the picnic gatherings...there are never any left overs. I find that if I make it the night before the picnic, it tastes even better, if that is possible. I also have been using the Barilla Plus Elbows...what a difference. Thank you for posting this recipe!
