ingredients

1 cup raisins
1 cup nuts, chopped (optional)
1 teaspoon soda
1 cup (scant) hot water
1 cup mayonnaise
1 cup sugar
1 teaspoon vanilla extract
1 teaspoon cloves
1 teaspoon cinnamon
2 cups unbleached flour

directions

Combine the raisins, nuts, soda and hot water and allow to soak for 10 minutes.

Blend together the mayonnaise, sugar, vanilla extract, cloves and cinnamon. Fold this mixture alternately with the raisin mixture into the flour.

Pour the batter into a greased and floured 9-inch square baking pan and bake in a preheated 350 degrees F oven for 35 to 40 minutes or until the cake tests done.

    What a marvelous recipe! I admit I was skeptical about using mayonnaise instead of oil and eggs for making a cake, but this cake made a complete believer out of me! I had spent the day making all the desserts for our Thanksgiving Feast and my house was full of gingerbread, sugar cookies, puddings, pumpkin pies and apple pies. My family was begging for a dessert for dinner or for "just a taste, please Mom!" I remembered seeing this little treasure and whipped it up with ingredients I had left over from my other creations. I used Craisins (dried cranberries) instead of the raisins, and chose walnuts as the nuts. I cut back on the amount of sugar in the recipe (3/4 cup) as I used hot apple juice to soak the craisins, and I felt the apple juice probably had a lot of sugar. I also used a full tablespoon of Pumpkin Pie Spice. It came out deep brown with tons of spices and full of fruit and nuts. A truly wonderful cake, moist, rich and light. I'm so very glad I found this! Thank you thank you thank you to the wonderful person who posted the recipe, you are my new best friend!
