ingredients

1 cup butter, softened
1 cup brown sugar, packed
1 cup white sugar
4 eggs
2 teaspoons brandy or vanilla
3 1/4 cups cake flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon Chinese five spice powder
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 teaspoon unsweetened cocoa powder
1 1/2 cup buttermilk

Caramel Frosting

3/4 cup butter
1 1/2 cup brown sugar
1/4 teaspoon salt
1/3 cup milk
3 cups powdered sugar

directions

Cream butter and sugars in a large mixing bowl. Add eggs, one at a time, beating well after each addition. Beat in brandy. Sift together dry ingredients and add them to the butter mixture, alternately with the buttermilk.

Pour into three 9-inch pans that have been greased and floured. Bake at 350 degrees F for 35 to 40 minutes. Cool 10 minutes and invert cakes on racks to cool completely. Frost with Caramel Frosting.

For Frosting: Melt butter in saucepan. Add brown sugar and salt and boil for 2 minutes, stirring constantly. Remove from heat and add milk. Bring to a full boil again, and then remove from heat.

Cool to lukewarm. Beat in powdered sugar. Frosting will thicken as it cools. If it becomes too thick, warm frosting slightly to thin.
