ingredients
2 cups all purpose flour
2 eggs
1 tablespoon olive oil
4 tablespoons water
directions
Add all ingredients to a food processor. Process until mixture starts to form a ball. You may want to start with a little less water depending on the size of your eggs and moistness of your flour.
Wrap ball in plastic wrap and let rest for about an hour. Then make your pasta using your pasta machine or rolling out.

I followed the directions, but my noodles came out rubbery. What happened?
Tough pasta dough can happen if the mixture is kneaded too long (in this case, processed too long in the food processor). You want it to just come together in a ball, then remove it. Also, don't overwork it when you are rolling it out. You can also get tough pasta if you overcook it. Fresh pasta really only needs a few minutes to cook.

I made them with my 5 year old daughter so we mixed it by hand and kneaded it out till it was just right. It rolled out without any sticking and took about 3 minutes or so to cook. A family of 4 ate it and there were no leftovers... I plan on doubling the recipe next time.
