1 quart fresh or frozen black raspberries (if frozen, thaw first)
1 cup white granulated sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1/4 cup white granulated sugar
1 cup water
3 tablespoons cornstarch
3 cups biscuit baking mix
1 cup milk
1 dash nutmeg (optional)
additional sugar (optional)
In a 6 quart pan, combine raspberries, 1 cup sugar, water and cornstarch, stirring to blend. Bring to a boil, stirring often. Turn heat to low.
Meanwhile, combine baking mix, milk and 1/4 cup sugar, mixing until soft dough forms. Drop by spoonfuls onto boiling berries.
Cook over low heat, uncovered, for 10 minutes, then cover. Cook 10 to 15 minutes more, or until dumplings are cooked through.
For a glazed effect, sprinkle dumplings with additional sugar and a dash of nutmeg before serving.
