24 marinated artichoke quarters, drained
24 cherry or grape tomatoes
24 cubes reduced-fat white cheddar or Swiss cheese
directions
Skewer an artichoke quarter, cherry tomato, and cube of cheese with a toothpick or decorative cocktail pick. Repeat with the remaining ingredients to assemble the rest of the appetizers.
Serve immediately. Or, place on a plate and cover with plastic wrap and refrigerate until ready to serve. Let come to room temperature before serving.
