ingredients
1/2 cup butter
1 cup light brown sugar
1 egg
1 1/2 teaspoon grated orange peel
1/4 cup orange juice
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
2 cups oats
directions
In large bowl of mixer, cream butter and sugar until fluffy. Beat in egg, orange peel and juice.
Gradually beat in flour, baking powder, soda, salt and nutmeg until mixed.
Drop by heaping teaspoonfuls on greased cookie sheets. Bake in 350 degree F oven until golden around edges.

This cookie is delicious, both chewy in the middle and crispy around the edges! I'd make one comment on the instructions above: I had to throw out the first batch because adding the orange juice to the butter (I used fresh mandarin juice from a neighbor's tree--very tart), it curdled. When I started again, I did add the zest to the butter-sugar combo, but added the juice very slowly to the batter AFTER the flour and oats. The cookies were a hit, and I was asked for the recipe--always a sign that people like something!

Great tasting. Baked for 13 minutes (got 29 cookies). Not the nicest looking cookie to take out, but very tasty and easy to make.
