Italian Easter Anise Cookies

ingredients
8 whole eggs
1/2 teaspoon salt
7 tablespoons sugar
2 teaspoons baking powder
7 tablespoons vegetable oil
2 teaspoons anise seeds
2 teaspoons vanilla extract
4 cups flour
directions
Beat eggs in large bowl until creamy and very airy, about 3 minutes. Add salt, sugar, baking powder, and oil, and continue beating for a few minutes. Add seeds and vanilla. Stir in with spoon.
Add 3 cups flour and fold in. Then add the last cup of flour a little at a time. Roll dough out on board and shape cookies using remaining flour. Dough should be soft and sticky.
Shape in diagonal pieces or diamond shapes, about 2 inches long. Bake 15 minutes until brown at 375 degrees F. Frost with powdered sugar icing.
