It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


1/2 cup shortening or butter
1/2 cup brown sugar, firmly packed
1/4 cup molasses
1 egg, beaten
1 cup seedless raisins, chopped
3/4 cup walnuts, chopped
1 3/4 cup sifted all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 cup cold coffee or milk
Heat oven to 400 degrees F.
Cream shortening and sugar. Add molasses, then egg, and mix thoroughly. Sift flour, salt, soda, and spices together into a medium-size bowl. Stir in raisins and nuts. Add alternately with coffee (or milk) to creamed mixture.
Drop by rounded teaspoonfuls about 1 1/2 inches apart onto greased baking sheet. Bake for 10-12 minutes.
