ingredients

1 package (12 ounce size) soft silken tofu
2 medium bananas, sliced
1/3 cup agave syrup or honey
2 teaspoons cornstarch
1 teaspoon fresh lemon juice
1 teaspoon vanilla extract

directions

In a blender or food processor, combine all ingredients and blend until smooth. Pour into a bowl or individual bowls and cover with plastic.

Chill for about 1 hour before serving.

NOTE: Pudding will turn brown if left for too long in the refrigerator, although flavor is not affected by this.
