4 ounces corn starch
7 ounces baking chocolate
4 cups milk
Break chocolate into pieces and place in a glass bowl. Melt it using a bain-marie. Place the bowl in a saucepan containing simmering water. Stir occasionally.
When chocolate is melted, remove from the heat and gradually add corn starch. Mix well and add the milk.
In a medium saucepan over medium heat, cook the mixture. Stir constantly. It will become thick.
Remove from the heat. Let cool and pour into ramekins.

I don't like to use a glass bowl for this cooking method. I used my double boiler and it worked just fine. The texture was exactly like chocolate pudding but the flavor wasn't great. Maybe it was the chocolate I used but it just wasn't what I was looking for. I'd maybe use a combination of semisweet and milk chocolate next time for a little better flavor.
