Pan Seared Tilapia With Strawberry Salad

Strawberry Salad
2 cups sliced fresh strawberries
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 pinch kosher salt (fine not coarse ground)
fresh ground pink peppercorns
8 cups spring greens mix
Pan Seared Tilapia
6 tilapia fillets
1 lemon, zest
1 tablespoon fresh ground black pepper
1 tablespoon kosher salt
2 tablespoons unsalted butter
extra virgin olive oil

For Strawberry Salad: In a mixing bowl, combine the strawberries, oil, vinegar, salt and pepper. Stir well and let sit covered in your fridge.
Wash your greens and dry. Place greens in a salad bowl, cover with paper towels or clean kitchen towel and put in the fridge. You want this salad to be cold and crisp.
For Pan Seared Tilapia: In a small bowl, stir together the lemon zest, salt and pepper until well mixed.
Rub lightly the tilapia fillets with the lemon, pepper, and salt. You want to coat the fillets just enough to season them a bit.
Heat the olive oil to medium in a sauce pan just before adding the tilapia fillets, then add the butter. Quickly place your fillets in the hot pan. You should hear that searing sound; if not, your oil isn't hot enough yet.
Sear the fish for about 1 1/2 to 2 minutes, then turn and sear on the other side. Place the seared fish fillets on paper towels to cool and drain as you do the final salad prep.
Toss the greens and marinated strawberries together in your big salad bowl.
On a chilled plate serve two cups of the salad mix and place one of the fish fillets set aside on top. Garnish with some fresh chopped flat leaf parsley and a bit of lemon zest and serve immediately.
