ingredients
4 (4- to 6 ounce size) tilapia fillets
1/3 cup freshly grated Parmesan cheese
1/4 cup low-fat mayonnaise
2 tablespoons minced scallions
1/4 cup dry bread crumbs
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
directions
Heat oven to 400 degrees F.
Place tilapia on nonstick foil. In a small bowl combine cheese, mayonnaise and scallions, spread evenly over fish. In another bowl, combine bread crumbs, basil, oregano, salt and black pepper, sprinkle over fish. Coat fish lightly with cooking spray. Bake 10 minutes or until fish flakes easily with fork.

This was really easy to make and if we used fresh as opposed to prepackaged spices, I'm sure the taste would be sharper. However, this was my spouse's first meal that he really liked from me. That means a whole lot.

This entree is very flavorful and juicy. If your fillets are thick, it may take 15 min. or more to bake.

A tasty and easy recipe! You can spread the mayo/cheese mixture to the thickness you like. We divided the mixture evenly among the fillets but I think next time we'd do a slightly lighter coating. The flavor was outstanding and the fish was perfectly done. The actual cook time might vary depending on how thick your tilapia fillets are so be sure to test for doneness
