Baked Tilapia In Garlic & Olive Oil

ingredients
4 tilapia fillets (4 ounce each)
4 cloves garlic, crushed
2 tablespoons olive oil
1 onion, chopped
1/4 teaspoon cayenne pepper
directions
Rub the fish fillets with the crushed garlic, then place them in a shallow, non-reactive dish. Spoon the olive oil over the fish until they are coated. Place the onion on top of the fish. Cover the fish and refrigerate overnight to allow the fish to soak in the marinade.
Preheat the oven to 350 degrees F.
If baking the fish, transfer it to a 9x13 inch baking dish along with the olive oil, garlic, and onion. Sprinkle the fish with the cayenne or white pepper. If you are grilling the fish, wrap the fish and oil, garlic, onion, and pepper in aluminum foil. Bake at 350 degrees F (175 degrees F) for 30 minutes.

The simple addition of salt was all this recipe needed to go from bland to delicious. I think a lot of recipes assume you're adding salt and/or pepper so they omit them from the instructions. It's a simple tilapia recipe and it's meant to have simple flavors. I served it with spicy couscous.

Wish i read the reviews first before trying, very bland needs lemon or wine or anything.. we ended up eating with soy sauce to add flavor.

I don't agree with the previous comment. The flavor and texture was perfect. My 7 year old and 2 year old kids LOVED it and my son even asked for 2nds.

Not good! Bland,too much garlic, onions did not get tender. Suggest 2 cloves garlic and a small MINCED onion as opposed to chopped. Needs salt and fine sliced lemons on top while baking. A splash of white wine atop the fish wouldn't hurt and can only help. On the upside, fish was done perfectly, not dry very moist.
