Slow Cooker All-Day Stuffed Potatoes

ingredients
6 large baking potatoes
3 tablespoons butter or margarine
1/2 cup milk
1/2 cup sour cream
1 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons grated Parmesan cheese
chopped fresh chives
directions
Wash potatoes, but do not dry. Place damp potatoes in a slow cooker. Cover and cook on LOW 6-8 hours or until tender.
Remove from cooker. Cut off top third of each potato lengthwise and scoop out interior, leaving a 1/4" shell. Mash potato pulp. Add butter, milk, sour cream, salt, and pepper. Beat until fluffy, adding more milk if necessary.
Spoon mixture into shells, mounding tops. Sprinkle with cheese.
Place potatoes in a shallow baking pan. Preheat oven to 425 degrees F if serving now or cover and refrigerate to serve later.
Bake 15 minutes or until hot and lightly browned. Top with chopped chives.
