Pressure Cooker Chicken Stock

ingredients
1 1/2 pound chicken parts
2 quarts water
1 teaspoon salt
1 onion, peeled and sliced
1 carrot, sliced
1 tablespoon vegetable oil
directions
Wipe chicken pieces with damp cloth and dry. Place in cooker and add water.
Add remaining ingredients. Bring to boil, then skim. Cover and set control at 15. Cook over high heat until pressure is reached.
Reduce heat; cook 15 minutes. Cool cooker naturally or place under running water to cool. Strain.
