ingredients
16 ounces lean round steak, cut into 36 pieces
1 can (15 ounce size) beef broth
1 1/4 cup hot water
1/4 teaspoon dried dill weed
3 1/2 cups finely shredded cabbage
1 cup chopped onion
1 cup thinly sliced carrots
1 cup finely chopped celery
3/4 cup reduced-sodium tomato juice
1 tablespoon lemon juice
1 can (16 ounce size) julienne beets, drained
6 tablespoons no-fat sour cream
directions
Spray a slow cooker container with butter-flavored cooking spray.
In prepared container, combine steak pieces, beef broth, and water. Stir in dill weed, cabbage, onion, carrots, celery, and tomato juice. Cover and cook on LOW for 8 hours.
Add lemon juice and beets. Mix well to combine. Cover and cook on HIGH for 15 minutes.
Mix well before serving. When serving, top each bowl with 1 tablespoon sour cream.
