Borschok Russian Beet Soup

ingredients
6 beets, chopped
6 cups strong beef broth
1 whole onion, peeled
2 teaspoons sugar
1 tablespoon lemon juice, or more to taste
salt
black pepper
3 tablespoons dill, minced
1 cup sour cream
directions
Simmer whole beets in water until tender (about 15 minutes). Peel and chop beets.
In a large saucepan, simmer beef broth with peeled onion for about 15 minutes. Remove onion. Add chopped beets. Add sugar, lemon juice and salt and pepper, to taste.
Add minced dill to sour cream. Mix well. Soup can be served hot or cold. If served hot, top with a dollop of herbed sour cream. If served cold, stir herbed sour cream into soup.

My grandfather used to make beet soup when I was little. I have never been able to find a recipe like the one I remember from my youth and I can not wait to try it out! Stay tuned.
